Baba Ganoush: A Tale of the Smokey Aroma

Mutabal (aka Baba Ghanoush) is a light and airy breakfast that’s easy to prepare and brings you back to the good old days. It’s a classic Mediterranean dish that goes well alongside many other dishes or can be enjoyed on its own. Aubergine is a versatile vegetable but in this dish, it gives off a unique smokey aroma.

Serves: 1-2 people

Preparation time: 60 minutes

Suitable for vegetarians

Ingredients

  • 2 large aubergines
  • 1 teaspoon minced garlic
  • 1 tablespoon yogurt
  • 2 tablespoons tahini
  • 1 teaspoon lemon juice
  • Olive oil to preference
  • 1/4 teaspoon salt
  • Pitta bread or Arabic bread

Cooking Instructions

Step one:

  1. Set your oven to 170 degrees Celsius with the fan on if you put it on without the fan 190
  2. While waiting for the oven to heat up Use a fork to poke holes all around the aubergines and lightly rub them with olive oil once done put it in the oven for 45 to 50 minutes

Step two:

  1. In a bowl add tahini and lemon juice, and mix well until it becomes a paste
  2. Add the yogurt, garlic, and salt then mix again (lemon helps thicken the tahini to form the thickness you desire)
  3. Store in the fridge until the aubergines are done baking

Step three:

  1. When the aubergines are done let them cool for 10 minutes
  2. Peel off their skin and mash them up with the previous mixture (use a fork to mash up well)

Final step:

  1. Either use fresh Arabic bread or if your bread is stale dab it in a little water so that it can heat to more of a softer texture rather than a dry texture for about half a minute in a pre-warmed toaster
  2. Add olive oil according to your preference to the ready-made mixture of yummy Mutabal or Baba Ghanoush
  3. Serve & enjoy
